Behind the Scenes: 2000 Cake Balls!

You may remember back in March I had a huge cake ball project.

HUGE, as in 2000+ cake balls!

That’s roughly 55 regular sized cakes (9×13″ pans).

Or about 12 full sheet cakes! Plus a whole lotta frosting.

Not to mention approximately 66 POUNDS of CANDIQUIK! Holy moly.

These cake bites fed the guests that attended the 2012 Taste of the Timberwolves, a benefit dinner supporting the Timberwolves FastBreak Foundation.

Homemade Ooey Gooey Snickers Bars

I amaze myself, I really do.

And not in a overly confident kind of amaze.

I am seriously surprised that I pull off some of the treats I make. Like these adorable bunnies and lil’ chicks for example.

Anyone that really knows me, knows that I am not always the most graceful person.

I have been known to pour chocolate candiquik all over white pants, vanilla all over black pants, you get the drift…

The good news is, these bars do not require tedious decorating, drawing on cute little facesor any crazy assembly, nada.

If you can make almond bark, you totally got this.

There is no excuse in the world not to make these.

March Madness Basket(cake)balls

Why do I do this to myself? I eat completely weird combinations of food that should not be seen together!!!

I promise – I know how to cook, but I’m notoriously known for eating strange off-the-wall dinners. I’m busy. I’m not married yet. I do not have kids yet. I’m hungry. Therefore, it happens. Plus, I’m only harming myself when I do this…

Example 1: Monday’s dinner consisted of buffalo chicken and a chocolate banana protein shake. WTH?!

Example 2: Wednesday I had a snack that consisted of a vanilla latte and jalopeno cheddar chex mix. GAG. It seemed like a good idea when I saw the chex mix, then I saw the latte, and ended up with both. Let’s just say these things do not belong together and should not be consumed within the same hour of eachother.

There’s just something about spicy foods when combined with sweet milky drinks that DOES NOT go together.

I know, your glad I told you this. What would you have done without me?!

On another note – cake, frosting, and chocolate and/or vanilla candiquik DO go together. March and Basketball DO go together. I’m on a roll.

Facebook changin’ things up. March 30th = new layout for facebook pages. Bah humbug.

On another note: I’ve been so excited to show you these…I have been waiting since January to use these little sour candy things (aka rainbows) I found at Target in the dollar section. Now it’s March something and I’m rushing to publish them to the world wide web. What the heck happened to February – and when did March get here?! Sorry, I’ve been locked in a room rolling 2000 cake balls for the past week ;) .

These are a bit time consuming to make, but I’ve saved you the trial and error of figuring out what works best.

Slam Dunk Cookies

If someone told me 10 years ago “giving is better than receiving” I would have looked at them with one eyebrow raised and nodded in “agreement” while thinking to myself *this person is crazy and they obviously have no idea what they are talking about*. Receiving is WAY better than giving – pssh.

However, I’ve matured changed quite a bit. And while receiving is nice (I mean – who doesn’t like gifts!?) – giving is definitely more rewarding.

Don’t you love the feeling when you receive a message from someone saying “You just made my day”?

Okay, that’s your life lesson of the day – which has absolutely nothing to do with what I’m about to share with you.

But I needed something fast.

Something that I could whip up fast that will stay fresh for at least a couple days and something that will hold up when being shipped in mini flower pots. HUH?!

Common Cake Pop Issues & Tutorial

Have you made cake pops? Were they a complete disaster?

Yeah, me too. Seriously. We’ve all burned the heck out of our chocolate, lost a cake ball off the stick, had our perfectly good cake pops crack 5 minutes later and begin leaking weird stuff out everywhere! It’s sooo frustrating!

Don’t worry though, it gets better! But let me save you some time and sugar with a few tips…! Cool?

I’m obsessed with cake pops. I think they are the best thing since sliced bread. Whatever that means. Dang Bakerella, look what she started. Just kidding, I love her. By the way, did you know yesterday (February 1st) was National Cake Pop Day? It’s official.

I look back on my first cake pops/whatever you want to call them and they are sad (see below). Let’s just say, practice makes perfect.

Zesty White Puppy Chow & Chocolate Covered Strawberry Footballs

So…a lot of football games have been on lately. Really “important” games.

Of course neither the Broncos or the (ahem) Vikings are playing anymore.

So then, naturally, I was rooting for San Francisco. Why?! Because I like California.

And this is how I pick who to cheer for. Silly, I know. But now we’re down to Giants and Patriots…what to do, what to do? Think I’ll  just cheer for the opposite team the bf is cheering for.

Then while the game is going on I’ll usually  find something yummy to make, because football games are long. Really long.

Should’ve made something that took longer….

But it all worked out, because then I went on Pinterest.

Puppy Chow, Reindeer Food, Chocolate Peanut Butter Chex Mix, Chex Lemon Buddies, or whatever you usually call it.

I have a twist on this mix today. It might sound weird. You may be skeptical. But really, it’s just as addicting as the original.

And there’s a secret ingredient involved that you would probably guess at first bite.

Cranberry Orange Bliss Bars

You’re simply missing out if you don’t.

These were heavenly. Decadent. Outstanding.

I stumbled across them on Recipe Girl’s blog…

This is what happened after I read her post:

I bee-lined it to Target for cream cheese and eggs.

Don’t you hate when you have almost all the ingredients to a recipe!? That’s how I end up at the store, daily.

They are basically a blondie bar topped with an amazing white chocolate cream cheese (with a hint of orange zest) frosting.

I found these at this super cute blog, Sweet Tooth. Warning: be prepared to want to bake your heart out for the next week year after visiting her site. I seriously printed out 5 recipes and added them to my Recipes I Must Bake Real Soon queue.

That queue is huge by the way.

I just got home from North Carolina where I attended a little show.

Those sweet nothings above – those were my petnames for the duration of my trip in NC.

The women there were sooo warm and friendly. Gotta love that oh-so-sweet southern twang. The accent makes it that much better.
