This cake is everything I needed today.
Strawberry cake, golden oreos, lemon zest, cream cheese, and vanilla candiquik. In that order. Bring it on.
This recipe was inspired by Courtney from Pizzazzerie. She created the infamous Red Velvet Oreo Truffle Bars. Hubba hubba. So I played off of hers and made a Spring/Summer version. Or a version for anyone who isn’t a huge chocolate fan. Wait, that’d just be weird.

Ok, I want to chat about those energy/health bars.
You know the ones, they are sold next to the vitamins in most grocery stores…
I’ve tried several different brands of them. Several different flavors. Nada.
I was truly excited the first time I tried one. Chewy chocolate fudge brownie - YES, please! Dark Chocolate Peanut Butter. Count me in.

Turtle Cheesecake = creamy, smooth, chocolatey, caramely goodness.
Turtle Cheecake in a shot glass = see ‘turtle cheesecake’ + New Year’s party(!?) + a totally fun way to serve cheescake.
It also meant, me, stocking up on shot glasses. The store clerk probably thought I was ready for a boozy night of fun. But in reality…she had no idea.

Happy Thursday, happy day after the 4th of July…
Let’s talk cheesecake. Some cheesecakes can seem a little intimidating and not to mention, time consuming. This one that I am about to show you does not fall into either category. Have you made any of the cheesecakes I’ve shared? They are kind of a mix between a cream pie and a cheesecake. They are lighter than a lot of cheesecakes and (best part) require no baking.
While I was scrimmaging through old blog posts to find for today, I did a little happy dance when I came back across this one (aka Turtle NO BAKE Cheesecake). It’s so perfect. I didn’t dare choose a recipe that required your oven…I think the whole country is over 90 degrees this week month. Also, hello and welcome to all of the international friends that may be reading. I hope you’re staying cool, too!

Ok, maybe these aren’t sooo “personal” sized. Instead, you could grab 2 spoons and share - or not. They’re actually not all that much more than a large piece of pie.
You know what, you could probably even freeze these and pull out whenever the time is right. Or bring them to work! Hey, you have to be prepared for Mondays, mid-afternoons, and certain coworkers. What I’m saying is that these are (capital d)angerous…
I’ve been seeing more and more of these mason jars around - & they are being filled with all sorts of goodness. For example – just take a look at these little cheesecakes in a jar. Or Bakerella’s – YUM, or how about this one I found on pinterest. Swoon.
So go ahead, make these in advance, pull out when needed. What’s not to love?!
I used my super easy, no bake recipe for vanilla cream pie. Then I layered it with fresh strawberries and plump bluberries.
And the crust? No bake as well – I found myself digging all the way to the bottom to get a little bit of crust in each bite.
Next time – double crusting it. Yep, go ahead – add another layer of the graham crust in the middle! Genius.
Hindsight is always 20/20…

Sometimes I have a hard time focusing on one thing for a long period of time.
I’ll be writing a blog post and go to check who commented on my last status update. 10 times.
I’ll be in the middle of baking cookies and think to myself, “I should really bleach my whites…”
I’ll check the yahoo home page to find out that Ryan Gosling saved a woman’s life, then I begin to think of Kristan’s “Hey girl..” photos.
And don’t even get me started on Pinterest…it inspires and stresses me out at the same time.
Please tell me this is somewhat normal. Or maybe I have ADD. For real.
But sometimes this can be a good thing. Like when you buy these…

Now, how about those petit fours pictured way up there!?
What is a petit four anyways?! A tiny cake. A tiny, multi-layered cake enrobed in a vanilla coating (in this case). YUM!

This tree has to be one of the most elegant and awe-some desserts I have made!
I won’t lead you on, it was a bit time consuming. I would highly suggest breaking it up into a 2-3 day project. Make your cake pop mixture on day 1. Coat and decorate your cake pops the following day and construct the tree on the 3rd day. And if you’ve never made cake pops - start here.
This tree was approximately 18″ tall. You could certainly downsize and make a mini tree.

My stepmom Esta and I made this torte.
Fact is, it’s pretty much a no-bake cheesekcake or cream pie, or whatever you wanna call it.
With fresh Colorado peaches.
I’m talkin about the juice-running-down-your-chin-n’- forearm-when-you-bite-in, kind o’ peaches.

Amazing, delicious, OMG, wow - why didn’t I think of these!?
Recently we had a little contest, that some of you may have heard of…if not, you seriously need to join Club CandiQuik…

Things I’m digging:
1. Living my life like Julia Robert’s in “Eat, Pray, Love”. I’m totally down with gaining 10 lbs. in Italy, exploring the world, you know?
2. Weather warm enough to walk around in sandals. Bring on the heat! I promise I’ll never complain about being hot again, ever.
3. Reminiscing with my bestie over boys, school, and random drama from 10 years ago - while eating chips and salsa.
4. Margarita Cheesecake garnished with Sea Salt. Oh, did I mention, no baking req’d?! True story.

I wasn’t sure whether to call these 1- sticky, gooey, yummy cheesecake pops or 2- lemon-raspberry cheesecake pops. I went with the later.
Lemon-Raspberry Cheesecake Pops
You will need:
2 (16 oz.) packages Vanilla CANDIQUIK® Coating
2 (8 oz.) packages Cream Cheese, softened
1 packet (3.4 oz.) Jell-O Lemon Instant pudding/pie filling
1 tsp. Raspberry Extract (optional)
