 I think we’re still getting Spring and then Summer in Minne. I mean … it came last year (!?)

 I wasn’t sure whether to call these 1- sticky, gooey, yummy cheesecake pops or  2- lemon-raspberry cheesecake pops. I went with the later.

 

Lemon-Raspberry Cheesecake Pops

You will need:

2 (16 oz.) packages Vanilla CANDIQUIK® Coating

2 (8 oz.) packages Cream Cheese, softened

1 packet (3.4 oz.) Jell-O Lemon Instant pudding/pie filling

1 tsp. Raspberry Extract (optional)

I recently had a friend come up to me and tell me “Cadbury eggs would be awesome!!!”

So here I am. 27 hours later. Posting about chocolate eggs bursting with a fondant-like filling.

I just had to, for Easter, ya know!?

Homemade Almond Joys

49 things I’ve learned from my ___ years of existence, in no particular order:

1 Floss. 2 Wear comfortable shoes. 3 Go to the bathroom before you leave. 4 Spend less than you make. 5 Dance. 6  Just because it’s free, doesn’t mean you need it. 7 Master a recipe for something obscenely delicious. 8 Call your grandma. 9 Look both ways before you cross the street. 10 Don’t speed. 11 You will get caught eventually. 12 Give compliments more often. 13 Chocolate is good. 14 Diet pills don’t work. 15 Paying taxes sucks. 16 Coffee with cream is good. 17 Black coffee is gross. 18 learn from your mistakes. 29 Smile. 20 Naps are good. 21 Smell the flowers. 22 It’s the little things. 23 Don’t take things too personal. 24 Go to the doctor. 25 Buy insurance. 26 Write a thank you note. 27 Care. 28 Less is more. 29 Everyone knows more about something than you. 30 Nobody has it all figured out. 31 Go with your gut. 32 Don’t overthink it. 33 Swearing was cool when it was forbidden. 34 Swearing can make you sound dumb. 35 Try something new. 36 Things are not as you remembered as a kid. 37 Life is a solo trip with visitors, some long-term, some not. 38 Foil doesn’t do so well in the microwave. 39 It’s much easier to fall in love than to stay in love. 40 Family is important. 41 Do what makes you happy. 42 Timing can make all the difference. 43 My dryer eats socks. 44 Anyone who judges you by the car you’re driving or the shoes you’re wearing isn’t worth impressing anyways. 45 Zicam (zinc) really does shorten a cold. 46 The store brand jelly is good enough, the store brand ketchup is not. 47 Music is powerful. 48 I was young when I learned thirty eight, no worries. 49 Smiles and yawns are contagious.

None of these really have much to do with what I’m about to share - well, except #13.

Chocolate Peanut Butter Balls

  

 

Every once in a while I dip whatever I can find in CANDIQUIK…

Sometimes I turn CANDIQUIK into cookies.

Sometimes into cake…cheesecake too.

Sometimes bread

Even animals and characters…true story.

Today involves dipping…and we have lots of sugar, peanut butter, regular butter, chocolate, ohhhh and more sugar, to bring you – homemade peanut butter balls coated in chocolate…MMM HMM!

You will need:
  • 1 cup peanut butter (creamy)
  • 6 teaspoons butter, softened
  • 2 cups confectioner’s sugar
  • 1 (16oz) pkg chocolate Candiquik

Double Chocolate Chip Cookie Dough Bites

Let’s call this a recipe redo. I posted these a wee long time ago; back when I just started this blog a little over 3 years ago.

Nothing has changed on the recipe, but I’ve freshened up the photos and added a little twist on them. Two flavors of baking chips: vanilla and semi-sweet. These are quite possibly one of the few desserts that I can’t resist. Self control with cookie dough bites = zero.

But they’re worth it, every darn last bite.

I’ve tried several variations of cookie dough bite recipes. For research purposes, you know!?

We all know I didn’t post the first cookie dough bite recipe one nor the last.

But of alll the cookie dough recipes I’ve tried, this one is the almighty winner – trust my experimentations and save this recipe.

Or maybe you would like to conduct your own research experiment? Nah, just save this one and make as needed.

I suggest tripling the recipe and storing an emergency bag of these in your freezer.

I love my weekends…sleeping in (sometimes), wandering from store to store in search of something I think I “need”,  having breakfast on a patio followed later than evening with a cocktail on a patio….spoiling myself with sweet desserts, friends, and nothingness…

The best combination since Saturday and Sunday…cookie dough and chocolate. Make These! Disappoint they will not!

Now let me address your next question – yes, I am making the assumption that I already know your next question – are there raw eggs used!? No…I realize there is a possibility that this could be bad. So here we go, eggless cookie dough.

 

Double Chocolate Chip Cookie Dough Bites!

Ingredients
  • 1 stick (1/2 C) butter, melted
  • 1 cup plus 2 Tablespoons all purpose flour
  • ½ teaspoon baking soda (for flavor)
  • dash of salt
  • ½ cup brown sugar
  • ⅓ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ⅓ cup Greek yogurt (replaces eggs)
  • ½ cup (or to taste) semi-sweet chocolate chips
  • 1 package (16 oz.) Chocolate CANDIQUIK Coating
  • (optional: add white chocolate chips and chopped walnuts!)

Instructions
  1. In a large mixing bowl, cream the sugars and butter together until well mixed, beat in the yogurt (or applesauce or p.b.) and vanilla extract until mixed.
  2. Mix the flour, salt, and baking soda and add this to the butter/sugar mixture. Stir until well combined, and fold in the chocolate chips (and nuts if you wish).
  3. Scoop spoonfuls onto wax paper and shape into balls. Spear each cookie dough ball with a toothpick (lollipop stick, small fork, etc.) and place in the freezer for at least 1 hour.
  4. When ready to dip the cookie dough balls, melt CANDIQUIK according to directions on the package and dip the cookie dough bites in the coating, placing back on the wax paper to dry.
  5. Best served cold from the fridge.

Notes

Bourbon Desserts!

Horse racing. Big Hats. Bourbon based desserts. Sums up this weekend!

Chocolate Bourbon Pecan Pie

There’s one dessert that is a must-have at a Kentucky Derby viewing party – one that has been served for over 50 years at the Kentucky Derby, and that is the Derby Pie!

Ingredients

  • 1/2 cup butter, melted
  • 3/4 cup white sugar
  • 1/2 cup all-purpose flour
  • 2 eggs
  • 1 tablespoon bourbon
  • 1/2 package CANDIQUIK®
  • 1 cup chopped walnuts
  • 1 prepared 8 inch pie crust

Directions

  1. Preheat oven to 350 degrees F (175 degrees C.). Melt CANDIQUIK according to package directions. Spread CANDIQUIK and nuts in bottom of pie shell.
  2. In a mixing bowl, cream butter or margarine and sugar together. Mix in flour. Beat the eggs slightly, and mix into the creamed mixture. Stir in bourbon. Pour filling into pie shell (over CANDIQUIK and nuts).
  3. Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes. Serve each slice with ice cream and sprinkle with mini chips.

Kentucky Derby Bourbon Balls

Guests will be asking for these again! The traditional dessert ingredients of the Derby – with a little bit of flare. Let me know what you think!

Ingredients

3/4 cups finely chopped pecans
1/4 cup bourbon
1/4 cup butter, softened
1/2 tablespoon vanilla
1/2 teaspoon salt
7 oz can sweetened condensed milk
1 lb plus 1 cup of powdered sugar

1 pkg (16oz) Chocolate CANDIQUIK®

Directions

*If possible, soak pecans in bourbon several hours.

  1. In a large mixing bowl, beat butter, vanilla, and salt – should be fluffy. Slowly beat in sweetened condensed milk.
  2. Stir in pecan mix and powdered sugar – blend well.
  3. Form the dough into 1-inch balls, and roll each ball in sugar. Place the finished bourbon balls on a cooling rack to finish setting up.
  4. Melt CANDIQUIK according to directions on package, dip bourban balls and coat evenly. Allow to dry on wax paper.
