Orange Creamsicle Cake Bites

First things first, it’s my 3 year blog anniversary! Holy canoli.

I barely knew a thing about blogging when I started Miss CandiQuik. But it’s so much fun and there is a true sense of community in the blogging world. If you’re thinking about starting a blog: do it. Start it and be persistent. Keep posting and watch it (and yourself) grow.

Now, let’s celebrate! And eat cake.

I found this cake mix while wondering down the baking aisle (surprise, surprise) and couldn’t pass it up. I wasn’t sure what type of orange flavor it would deliver but I was more than willing to experiment. The result: orange creamsicle, people! Even more so when crumbled up and smooshed together with buttercream frosting.

Personal Vanilla Berry Cream Pies

Ok, maybe these aren’t sooo “personal” sized. Instead, you could grab 2 spoons and share - or not. They’re actually not all that much more than a large piece of pie.

You know what, you could probably even freeze these and pull out whenever the time is right. Or bring them to work! Hey, you have to be prepared for Mondays, mid-afternoons, and certain coworkers. What I’m saying is that these are (capital d)angerous…

I’ve been seeing more and more of these mason jars around - & they are being filled with all sorts of goodness. For example – just take a look at these little cheesecakes in a jar. Or Bakerella’s – YUM, or how about this one I found on pinterest. Swoon.

So go ahead, make these in advance, pull out when needed. What’s not to love?!

I used my super easy, no bake recipe for vanilla cream pie. Then I layered it with fresh strawberries and plump bluberries.

And the crust? No bake as well – I found myself digging all the way to the bottom to get a little bit of crust in each bite.

Next time – double crusting it. Yep, go ahead – add another layer of the graham crust in the middle! Genius.

Hindsight is always 20/20…

(Easy) White Chocolate Raspberry Petit Fours

Sometimes I have a hard time focusing on one thing for a long period of time.

I’ll be writing a blog post and go to check who commented on my last status update. 10 times.

I’ll be in the middle of baking cookies and think to myself, “I should really bleach my whites…”

I’ll check the yahoo home page to find out that Ryan Gosling saved a woman’s life, then I begin to think of Kristan’s “Hey girl..” photos.

And don’t even get me started on Pinterest…it inspires and stresses me out at the same time.

Please tell me this is somewhat normal. Or maybe I have ADD. For real.

But sometimes this can be a good thing. Like when you buy these…

and end up with this…

True story! Try it.

Mmm, cherry vanilla.

Now, how about those petit fours pictured way up there!?

What is a petit four anyways?! A tiny cake. A tiny, multi-layered cake enrobed in a vanilla coating (in this case). YUM!

Howdy!

Hello!

Hola!

It’s just about time to start posting fall inspired recipes and then umm, that season that follows fall.

Yikes.

Let’s not talk about that yet.

Let’s talk about cherry chips, coconut, chocolate and all the goodness they can produce.

Whoopie Pies

Whoopie Pies.

Ok, sorta whoopie pies.

But please save the “these aren’t realllllyy whoopie pies” comments. I know. You know. We know.

(Feelin’ a little feisty today ;) can you tell?)

But they kind of look like whoopie pies, which is close enough for me. Mock whoopie pies. There we go.

Like the mock ice cream pops made a little while back.

There’s something a little special about these cookies though. They aren’t like your normal cookie. They are made out of a cake mix, yep! They produce a soft, chewy, brownie-like, mmm(!) Cake Cookie! You just add less liquids to the cake mix…

3 Ways to “Wow” Mom this Mother’s Day

Chocolate Covered Strawberries

*1 package chocolate CANDIQUIK®

*1 package vanilla CANDIQUIK®

*Optional: assorted nuts, sprinkles, etc.

These are always fun and easy to make, create your own designs to personalize something special for mom this Mother’s Day.

Mmm!

All you will need is:
-1 package (16 oz) Vanilla or Chocolate CANDIQUIK® Coating
-12 foil or paper cups
-Fresh fruit (raspberries, blueberries, etc.)
-Whipped Cream (or ice cream!)

1- Melt CANDIQUIK® Coating according to directions on package.
2- Place foil or paper baking cups in muffin pans to add stability to cups while coating.
3- Using a small spoon, coat the inside of a baking cup with melted CANDIQUIK® Coating. Use spoon to coat bottom and sides of baking cup. Bring the coating almost to the top of the cup, but not over the edge. Repeat with all remaining cups; place in refrigerator.
4- When coating is set, carefully peel the baking cups away from the CANDIQUIK® Coating.
5- Fill each cup with fresh fruit and whipped cream.

Instead of your traditional flower bouquet, surprise mom with creativity and thought.

Simple – all you need is 1 package vanilla CANDIQUIK®, large marshmallows, wooden skewers, 1 package coconut flakes, and assorted food coloring.

~ Place coconut in plastic bag, add a few drops of food coloring and shake (do this with as many colors as you want)

~Melt CANDIQUIK® according to directions.

~ Place marshmallow on a skewer, dip into the CANDIQUIK®, let excess drip off.

~Immediately sprinkle the colored coconut onto the covered marshmallow.

~Allow to cool on wax paper or place sticks into a block of styrofoam.

~Fill a shallow vase with sugar and arrange the “marshmallow bouquet” flowers.
