White Capped Brownies.

Yesterday was not the greatest of days. We all have those, right?! I hate to be Debbie Downer, but those are the facts.

However, it did get better.

It is amazing what a little chocolate therapy will do for ‘ya. Oh…and cheesecake. Layered on top of the chocolate.

Form of chocolate: brownies.

Form of cheesecake: no bake. classic new york style.

Oh, the results. I don’t know what to do, say, think, or feel.

It was so very delicious.

Here is what you will need – for the brownies:

(I cheated)

1 box duncan hines double fudge brownie mix

1/3 C water

1 egg

1/3 C vegetable oil

For the cheesecake:

1 package (16 oz)Vanilla Candiquik

1 container (8 oz) whipped topping

2 (8 oz) packages cream cheese, softened

1 package (3.4 oz) instant cheesecake pudding

DIRECTIONS:

1. Preheat oven to 350. Grease bottom of 13 X 9 pan.
2. Combine all of the brownie ingredients including fudge packet from mix and stir with spoon until well blended.

Spread into pan.
3. Bake at 350 for 38-40 miniutes or until edges and top are browned and toothpick inserted 1″ from edges comes out clean.

4. Beat softened cream cheese, melted candiquik, and pudding mix in large bowl at medium speed with an electric mixer. Beat in whipped topping until smooth. Spread over brownie mixture.

 
5. Cool completely and the refrigerate until well chilled.

Slice n’ chow down!

White trash popcorn

 

I wasn’t sure what to call this. All I knew was I made popcorn balls with vanilla candiquik and whatever else I wanted to throw in. Feel free to do the same…in the meantime, one of the many possible combinations of my “white trash” popcorn balls:

   

 

I thought about calling them just popcorn balls, lame. How about vanilla, chocolate, almond popcorn? Hmm..too long. Vanilla, whateva-you-want-to- throw-in-it popcorn.

Ok, you see? I’m obsessing about this.

Realistically I’m not concerned what you would like to call this popcorn concoction. I just care that you eat it.

Delicious, irrestible, quick n’ easy. Snack away.

I used an air popper with 2/3 c. yellow popcorn kernels….salted to your liking.

In a medium sized pan, heat 1 1/2 cups light corn syup over medium-low heat, until it begins boiling.

While waiting for the corn syrup to boil, melt the vanilla candiquik for 1 minute in the microwave, stir, and mic another 15 seconds if necessary.

Once corn syrup is boiling, remove from burner and pour the entire tray of candiquik in. Stir with a spatula until well mixed.

Pour this over the popcorn in a large bowl, mix with the spatula to coat every single kernel of popped corn :) …or most of them.

Spill a little reeses pieces in, maybe some almonds…what would you like in them?

Then simply form these into balls with your two hands, and place on wax paper.

 

Cute and sooo tasty. Perfect for football, after school, midnight snack, plus Halloween is approaching…

No Bake Turtle Cheesecake

 

No Bake Turtle Cheesecake by Miss CandiQuik

I’m going to warn you. Let your guard down for a minute.

Say goodbye to any willpower you may possess.

And do not be afraid of the sugar. Do not be afraid of the sugar. Repeat this an additional seven times.

Go ahead and put away the measuring cups.

And it gets even better – no oven required!

Sometimes, simple is best.

Often, simple is best.

Ok, most of the time, simple is best.

Well, when isn’t simpler better? I mean, when it sucks, sorry – stinks, of course then it is not better - but that will not be the situation here.

Chocolate, caramel, nuts, vanilla candiquik, whipped topping, cheesecake puddin’…who woulda thunk!?

 

 

Ingredients:

8 oz. container whipped topping (such as Cool Whip)

9″ graham cracker crust

1 (3.4oz) pkg Jell-O instant cheesecake pudding

2 – 8oz containers cream cheese , softened

1 pkg (16 oz) Vanilla CANDIQUIK Candy Coating

1 cup DeMet’s Turtle Candies (chopped into small pieces)

Garnish: caramel and chocolate syrup

Directions:

Melt the Candiquik…

Blend the candiquik in a large bowl with 1 (3.4oz) pkg Jell-O instant cheesecake pudding and cream cheese (2 – 8oz containers, softened).

Then fold in the whipped topping (8oz container) until smooth. Spoon mixture into an 8″ or 9″ graham cracker crust.

The fun part – drizzle as much chocolate, caramel (and I used chopped up turtle candies, or you could use snickers!) and chopped nuts on top. Slice and enjoy. Personally, I think this pie is best eaten after it has been chilled.

It was as if the angels above started singing as I took the first creamy, smooth, decadent bite. Ok, but no seriously, it makes me feel like I want to skip dinner just so I have room for an extra slice.

After school snack? Check. Summer dessert? Check. 10 min cheesecake anytime you desire? Yes ma’am. This is dangerous. Devine. Enjoy.
