Happy Thursday, happy day after the 4th of July…

Let’s talk cheesecake. Some cheesecakes can seem a little intimidating and not to mention, time consuming. This one that I am about to show you does not fall into either category. Have you made any of the cheesecakes I’ve shared? They are kind of a mix between a cream pie and a cheesecake. They are lighter than a lot of cheesecakes and (best part) require no baking.

While I was scrimmaging through old blog posts to find for today, I did a little happy dance when I came back across this one (aka Turtle NO BAKE Cheesecake). It’s so perfect. I didn’t dare choose a recipe that required your oven…I think the whole country is over 90 degrees this week month. Also, hello and welcome to all of the international friends that may be reading.
