Eggnog is one of those love-it or hate-it things that’s pretty divided into those two categories. Some people get SO excited for the holidays because of eggnog, and others cringe at the thought of it. And while I wish I could commit to a side, I’m honestly in the middle.
Sometimes, I crave eggnog and the sweetness it brings. It’s just so reminiscent of the holiday season and gets me in the spirit. Other times I can’t stand the thought of drinking it since it is so sweet. But despite being divided on the drink, I was not so picky about these cookies! In fact, I couldn’t keep my hands off of them; they’re just so dang delicious!
I get that baking cookies is probably one of the last things you want to do during the hustle and bustle of the holidays, but I guarantee you will adore these cookies! The buttery, sweet aroma that wafts through your house as they bake is simply intoxicating… and I absolutely love the festive touch of a healthy dunk in Vanilla CandiQuik paired with bright, cheerful holly berry sprinkles. If you haven’t done a cookie exchange or gift platter yet, these are sure to be a huge hit!
Now… serving these Eggnog Spice Cookies with eggnog? That depends on what side you’re on
- 1 box white cake mix
- 1 egg
- ½ cup melted butter
- 2 tsp rum extract
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- Pinch ginger
- ½ pkg Vanilla CandiQuik
- Holiday sprinkles (I used holly berry ones, but anything festive will work!)
- Preheat oven to 350 degrees F. Line 2 baking sheets with silicone liners or spray the sheets lightly with cooking spray; set aside. Meanwhile, in a large bowl combine the cake mix, egg, melted butter, rum extract, cinnamon, nutmeg and ginger with a spoon until blended and a soft dough has formed.
- Portion the dough into Tablespoon-sized balls and place on the prepared baking sheets about 1-2" apart. Bake for approx. 8-10 minutes, rotating pans halfway through baking time, until cookies are golden brown and appear just about set. Do not over-bake as the cookies will continue to cook slightly as they rest. Allow cookies to cool completely on the baking sheets.
- Once cookies are cool, melt your Vanilla CandiQuik according to package directions. Dip each cookie half into the Vanilla CandiQuik and return the cookie to the baking sheet; immediately sprinkle with the holiday sprinkles. Allow the cookies to set before serving or packaging.
