I love Valentine’s Day.

Maybe ’cause it’s also my birthday…maybe.

Or because I will make these cookies especially for it.

Chocolate and Peppermint.

Best combination since Peanut Butter and Jelly.

A cocoa-peppermint cookie, with a peppermint buttercream filling, dipped in chocolate.

These cookies though, seriously. Keepers.

I want you to make all of these recipes on my blog but I REALLY want you to make this one.

Cocoa – Peppermint Creme Cookies

Cocoa Cookies:

3 T. butter, melted

1 egg white

1/4 C brown sugar

Pinch of Baking Soda

1/2 tsp. salt

1/4 C cocoa powder

1/2 C flour

¼ tsp. peppermint extract

Combine all ingredients together. Add flour slowly and mix, until dough is roll-able and not sticky. Once well mixed, roll thin, very thin.

Cut out your shapes (I did hearts for the big V-day!)

Bake at 325 degrees for 4-7 minutes, or until cookies have firmed and browned slightly around edges. Remove from oven and cool.

(The cocoa cookie batter by itself though, let’s just say not a bowl-licking kind of dough. Skip this if this is normally a tradition of yours. Just sayin’.)

Peppermint Buttercream Filling:

2 c. powdered sugar

4 T. melted butter

¼ tsp. peppermint extract

1/2 tsp. heavy whipping cream

For Coating:

1 package (16 oz) Chocolate Candiquik Coating

Mix together until it becomes thick and easy to roll with a rolling pin. Roll until about 1/4″ thick. Cut into desired shape. Place atop cooled cookies. Melt Chocolate CANDIQUIK according to the package directions. Dip cookies into melted CANDIQUIK with a fork, spoon chocolate over the cookie until fully covered. Place on a piece of wax or parchment paper to dry. Makes about 10 (larger) cookies.

  • 2 cups powdered sugar
  • 4 tablespoons butter, melted
  • ¼ tsp. peppermint extract
  • ½ tsp. heavy whipping cream
  • FOR COATING:
  • 1 (16 oz.) package Chocolate Candiquik Coating
Instructions
  1. FOR COOKIES:
  2. Preheat oven to 325 degrees F.
  3. Measure flour; set aside. Combine all remaining ingredients together in a large bowl and stir to combine.
  4. Gradually add flour and stir well, until dough is roll-able and not sticky. Once well mixed, roll out very thin with a rolling pin.
  5. Cut into desired shapes with cookie cutters.
  6. Bake for 4-7 minutes, or until cookies have firmed and browned slightly around edges. Remove from oven and cool.
  7. FOR BUTTERCREAM FILLING:
  8. In a medium bowl; mix all ingredients together until it becomes thick and easy to roll with a rolling pin.
  9. Roll until about ¼" thick. Cut into desired shape. Place atop cooled cookies.
  10. Melt Chocolate CANDIQUIK® in Melt and Make Microwaveable Tray™ according to the package directions.
  11. To dip cookies, lower into melted CANDIQUIK® on a fork and spoon CANDIQUIK® over the cookie until fully covered. Place on wax or parchment paper to dry.

 

 

 

My cookie cutter was fairly large (3″) and this recipe made 10 finished cookies for me. So, if you have a smaller heart cookie cutter on hand, maybe you want to use that one (easier to dip)? Plus, smaller cookies = less guilt.
