These candies are quite simple. I followed THIS Rolo Stuffed Ritz Cracker idea from Ashton at Something Swanky and then took it to the next level by dipping them in chocolate. Let’s call them Ritzwiches.
I really needed these this weekend after running in the Spooky Tails 5k; a local Twin Cities 5k hosted by Wags & Whiskers animal rescue.
Lola and I woke up to a crisp 32 degrees on Saturday morning, knowing that we had to drag our bodies out of the house and run 3.1 miles.
All the runners out there are probably scoffing, thinking, “3.1 miles – really? That’s my warmup.” But for me, not quite the story.
3.1 miles makes me realize how much I’m not a runner.
I can think of a few (okay, 548) other things I would have rather done at that moment but we had already signed up for it, plus it was supporting a good cause.
I can tell you that my toes were frozen for the first, ohh… TWO miles or so. Lola was even shivering while standing at the start line and she has a fur coat!
Then my mom, the sweet and thoughtful person that she is (hi, Mom!) shows up with Caribou Coffee at the finish line. Not typically what you’d think to greet someone with after running, but on Saturday it was perfecto. The only thing that could’ve made this any better is if I would have brought a supply of these candies to the race. Now I know. Next time.
You may want to buy TWO bags of Rolos. I almost forgot how good these things are…
Just a heads up.
- 2 sleeves Ritz Crackers
- 1 bag Rolo Candies
- 1 (16 oz.) package Chocolate CANDIQUIK Coating
- Sprinkles
- Preheat oven to 325º F.
- Line Ritz crackers on a cookie sheet and top each one with a Rolo chocolate.
- Place in the oven until the chocolate Rolos appear to be melting.
- Press another Ritz cracker on top and let cool.
- Melt Chocolate CANDIQUIK in tray according to package directions. Coat each cracker candy in chocolate and place on wax paper to set; sprinkle.
