Road trips. I had this converation with a co-worker the other day. He asked me if I’m the type that a) Gets to wherever I’m going as fast as possible or b) If I take my sweet time. Well if you know me and my patience, you already know the answer. If you’re still wondering, it’s A.

In other words, don’t drink anything until we’re down to 1/4 tank of gas unless you’re prepared to hold it for another 379 miles. Oh, and if you’re hungry, don’t worry because I’ve packed plenty of granola bars and snacks.

“A” found this out last year on our road trip to Colorado. This is how is started out:

A: “I’m hungry, can we pull over for some breakfast?”

Me: “Pull over? Breakfast? We still have almost a full tank. That’s why I packed food…”

A: “Are you serious!?”

Me: “Umm, yeah!”

A: “This is gonna be a long trip.”

Me: “Only if you keep wanting to stop for food when we have perfectly good food in the car…”

However, I’ve had to loosen up a little bit now that we travel with a dog. (Not that the dog’s needs outweigh his, but…)

Had I created these Magic Rainbow Krispie Bites just a few weeks earlier, I would’ve definitely packed these babies. Because I mean, who wouldn’t want these for breakfast?!

And I’m sure you can’t get sick of these. Trust me, I’ve had them as an afternoon snack for the past four days.

These Magic Rainbow Krispie Pops are fun and easy to make - the kids (and you!) are sure to enjoy them!

Ingredients
  • 4 Tablespoons butter
  • 10 oz. marshmallows
  • 6 cups Fruity Pebbles cereal
  • Popsicle Sticks
  • 8 oz. Vanilla CandiQuik coating
Instructions
  1. Grease a 9x13 inch baking dish and set aside.
  2. Melt butter in a deep pan over medium heat; add marshmallows and stir until melted.
  3. Add cereal and mix until evenly coated.
  4. Spread cereal mixture evenly into baking dish.
  5. Once cooled, turn out onto a cutting board; cut into desired shapes using cookie cutters and insert popsicle stick.
  6. Melt Vanilla CandiQuik in tray according to package directions. Dip cereal pops into Vanilla CandiQuik and set on wax paper to dry.
  7. Store in an airtight container for up to 5 days.
