This is how my Wednesday started: I was deep in thought during my morning commute drive.

Deep in thoughts filled of cookies and Valentine’s day. (Wouldn’t the world would be a little more peaceful if more people shared my thoughts!?)

Originally I thought of making chocolate dipped graham crackers, somehow incorporating a surprise , then making them valentinesy.

Hmm…

Then I thought about sugar cookies and those cute cookie cutters I bought last year with good intentions…

Eventually I got to these cookies.

They are really pretty easy to pull together.

Each finished cookie is composed of 3 cookies (hey, they’re small and after all, it’s Valentine’s Day).

The center cookie is hollowed out (prior to baking) and filled with a surprise. Everyone loves surprises.

After you have dipped the cookies in CandiQuik that will be used for the tops and bottoms…

Pipe, top, fill, pipe, top with final cookie. Voila.

A fun Valentine cookie which is composed of three sugar cookies, one cookie has a hollow center that is filled with the surprise!

Ingredients
  • COOKIES:
  • ¾ cup butter, softened
  • 1 cup white sugar
  • 2 eggs
  • ½ teaspoon vanilla extract
  • 2½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • DECORATION:
  • 1 package Vanilla CANDIQUIK® Coating
  • Assorted candy, Biscoff Spread, Nutella, etc. (to fill cookies)
  • Edible marker (ex: Americolor Gourmet Writer)
Instructions
  1. Preheat oven to 400 degrees F.
  2. In a large bowl, cream together butter and sugar until smooth. Beat in egg and vanilla. Stir in the flour, baking powder, and salt.
  3. Roll out dough on a well-floured surface approx. ¼ inch thick. Cut into shapes with cookie cutter. For the middle cookies: cut into shapes and cut a hole in the center of the dough.
  4. Bake 6 to 8 minutes. Cool completely.
  5. Melt Vanilla Candiquik according to package directions. Dip the front side of each top & bottom cookie in Candiquik. Place on wax paper to set. (Leave middle cookies uncoated.)
  6. Place remaining Candiquik in a piping bag or plastic bag with one corner cut off.
  7. Pipe Candiquik around the edge of the bottom cookie; press middle cookie on top: fill with assorted candy or desired spread; pipe Candiquik around the edge of the middle cookie and press on the top cookie.
  8. To create envelope decoration: pipe Candiquik as shown in the photo. Decorate with edible markers.
Notes/Tips
TIP: carve the center of the middle cookie out once it is on the baking sheet. It may be hard to pick up otherwise.

 

You could fill your cookies with Mini M&M’s or really any small candy… but let me give you a few other ideas:
