Vanilla Dipped Blueberries

This summer has been c-r-a-z-y. A good type of crazy though – besides the fact that it’s slipping by all too fast! Isn’t that always the case?

Things I’ve accomplished this summer: road trip to Colorado with the pups, horseback riding, restaurant hopping, volunteering, traveling for work…

Things that I haven’t been so good at accomplishing: baking and working out. I guess at least those are two good things to have happen in sync, but umm I still have this sweet tooth to fill and should really try and get back to it with my workout schedule – you know, so I can chow down a little more.

I’m loving these blueberries dipped in Vanilla coating. Talk about the perfect little afternoon (or morning, or evening) snack; slightly sweet, yet refreshing and pretty much guilt-free!

I always have fresh blueberries on hand when they are in season (otherwise those little suckers can be expensive) and this was the perfect sweet treat to make with the extra pint I bought.

Vanilla Dipped Blueberries

I wasn’t sure how the blueberry flavor would come through after being covered in the white-chocolatey like shell, but they were perfect. You could definitely still taste the flavor of the berry and it paired amazingly being dipped in the Vanilla CandiQuik.

These are just about the easiest treat you can make. Besides the dipping of each little berry, it really went pretty fast. I learned that instead of dipping one berry at a time, throw several berries in the tray at once then use a fork to lift them out (and allow the excess to drip off) and  place on wax paper. Since they are so small it only took a few minutes for them to dry. However, I think they lasted a matter of 10 minutes…

Fresh blueberries dipped in Vanilla CandiQuik Coating - a perfect little refreshing snack!
Serves: a lot!
  • 1 pint fresh blueberries
  • 1 package Vanilla CandiQuik Coating
  1. Wash blueberries and pat completely dry.
  2. Melt Vanilla CandiQuik in tray according to package directions.
  3. Place a few blueberries at a time directly in the tray and use a fork to lift out, shaking the excess coating off before placing on wax paper to dry.
Make sure blueberries and completely dry and do not have any water on them. Water + any chocolate or coating does not mix well!
